The Drinks Business has awarded Hoopoe wines as Organic Initiative of the Year. Uva Sapiens, in collaboration with Vintage Roots (Green Retailer of the Year) in UK and with Cantine Colomba Bianca developed the Hoopoe line of organic Sicilian wines.
Sustainability, attention to individual details and control of all steps from vine to bottle has been a winning path.

A success born of the collaboration between Musita (Salemi, TP) and Uva Sapiens: the Passocalcara Metodo Classico was in fact awarded Best Sparkling Wine by the "Guida ai Vini del Giornale di Sicilia 2015".

Sparkling, but from the south of Italy, also for Adua Villa, TV sommelier (and not only), author of "Vino Rosso Tacco 12", who has no doubts: 595 Colomba Bianca Metodo Classico Brut Nero D'Avola Rosè, which she defines as 'a bet on the hills of Trapani, great freshness, bright oniony pink colour, the ideal pink to bring to the table for Valentine's Day'. It is a classic method that matures 40 months on the lees, a project coming from the winamker Mattia Filippi.

Since 2012, Colomba Bianca winery has dedicated an annual publication to the vintages in the Province of Trapani, entitled 'Le uve raccontano' ("Grapes Tell"). The studies, rich in information, data and images, are the result of careful monitoring of the climate and capillary control of grape ripening. An interesting reflection on the characterization of territories and of variety-environment relationship, that Colomba Bianca carried out from 2012 to 2016 in collaboration with Uva Sapiens.
